Groupers
There are many types of groupers in the aquariums of the seafood markets of South Korea including Noryangjin.
As Koreans prefer firm textured raw fish, groupers have a firm texture with lots of flavor that make them popular and expensive.
However, there are relatively cheaper groupers that are fish farmed and imported that are much cheaper than other groupers so consumers should be aware of this when they purchase groupers from the aquariums so they wouldn’t overpay.
The groupers with the stripes and spotted patterns are the relatively cheaper fish farmed grouper species while the banded groupers(convict groupers) are much more expensive.
숭어 – Mullet - 鯔 ぼら(Bora)
The Korean pronunciation is soong uh. There are actually two types of mullet in South Korea one species found all over the world while one species is only found in the West Sea of South Korea.
Mullet is one of the fish that are most affordable in the Noryangjin market.
우럭 – Korean Rockfish 黒曹以 kurosoi)
The Korean pronunciation is Oooh Ruck. The Korean rockfish is also one of the most representative fish consumed raw. Often times when eating Korean Rockfish, the merchants will provide the bones and the head of the Korean Rockfish for Korean style spicy fish soup.
The Korean Rockfish broth is the most amazing fish for Korean style spicy fish soup Mae un tang(매운탕).
흑점 줄무늬 전갱이(줄무늬 전갱이) – striped horse mackerel - 縞鯵 しまたこ(shima ahji)
The Korean pronunciation is (heok jeum) jool moo nee jeon gang yi. The Striped horse mackerel is one of the expensive types of fish in the aquariums of noryangjin seafood market.
It is adequately oily with great flavor. The striped horse mackerel is a fish with well balanced flavor and recommended for those who are looking for a high-end fish that would suit general preferences.
농어 - Japanese Sea Bass - (鱸 スズキ すずき (Suzuki)
The Korean pronunciation is Nong Uh. The Japanese Sea bass is a good fish with decent flavor that could suit any kind of person’s preferences.
Snow Crabs
Both Opilio crabs and bairdi crabs often imported from Russia, Japan and sometimes the USA enter the fish markets of South Korea.
One of the unique features of snow crabs in South Korea is consumers could taste the intestines of the snow crabs since they are distributed alive. The intestines of the snowcrabs are packed with flavor that must be tasted.

King Crabs
All three types of king crabs red, blue and golden(brown) are found in the seafood markets of South Korea. Like the snow crabs, the intestines of the king crabs are a delicacy and must be consumed.

Abalone – 전복
The Korean pronunciation is Jeon bock. The shellfish with the white and black patterns are abalone that are a delicacy that Koreans enjoy. Abalone is actually a sea snail and it could be eaten raw as sashimi or steamed and boiled.
The intestines of the abalone is a delicacy and becomes a great sauce and seasoning. Abalone porridge is a great meal with the abalone meat along with the rice and abalone intestines mixed together.
Pen Shell – 키조개
The Korean pronunciation is Key Jo Gae. The long narrow shellfish are pen shells. Scallops have a great adductor muscle meat, however the adductor muscles of pen shells are also a great delicacy comparable to the scallop adductor muscle.
Merchants often sell shucked pen shell adductor muscle that is a bit firmer than scallop but almost equivalent flavor.
석화 – Oysters not shucked from the rock
The Korean pronunciation is Seok Hwa. These are oysters that grow on rocks where the shells haven’t been removed that are the same as oyster.
These are merely oysters in their natural status so they tend to be a bit fresher than ordinary oysters shipped.
Oysters are very cheap compared with other Western countries in South Korea so oysters are very affordable.
Triploid Oysters – 삼배체 굴 – Oysters larger than ordinary oysters
The Korean pronunciation is sam bae chae gool. Triploid oysters refer to the number of chromosomes where normally chromosomes are diploids which mean there are two chromosomes(2n). However triploid oysters have another chromosome that make them a 3n oyster.
This makes the oysters sterile and allow them to grow larger. Triploid oysters are larger and a delicacy. Triploid oysters are more expensive than general oysters.
